Tacos de Carne Mexicana
6 corn tortillas (use flour if preferred)
4 TBS olive oil
3 TBS black pepper
1/3 C lime juice
1 TBS salt
1/2 C cilantro, chopped
1/2 C onion, chopped
1 TBS Worcestershire sauce
Hot sauce to taste
3/4 LB "carne asada" beef (or use preferred beef cut into thin strips)
Sour cream (optional)
Guacamole (optional)
Cut beef strips into small, bite-size pieces. Chop the cilantro and onion. Heat a frying pan or skillet to medium-high heat. Add olive oil to the skillet. Then add the meat, cilantro, onion, salt and black pepper. Add the lime juice and Worcestershire sauce. Stir the mixture every five minutes, allowing it to boil in it's own liquids, as well as the oil and lime juice. Turn the heat to low and simmer for about ten minutes.
Heat the tortillas in an oven or microwave. Spoon meat mixture down the center of each tortilla. Top with lettuce, tomato, cheese, green or black olives, more onions, and hot sauce or salsa. Sour cream or guacamole are also optional toppings. If preferred, substitute tortillas with packaged crisp-shell tortillas from the grocer.
Microwave Tip: To heat tortillas in the microwave, wrap in a kitchen towel or dampened paper towels; heat inside of a container for about 15 seconds per tortilla.
