Lime-Light

Prepare gelatin according to package directions, except refrigerate until slightly thickened but not set. Beat gelatin mixture with an electric or rotary mixer for about thirty seconds to one minute. Beat in softened vanilla ice cream for about two minutes. Pour mixture into four dessert dishes or glass cups. Cover and refrigerate until set, about four hours. Garnish with whipped cream and maraschino cherries if desired.
