Djiboutian fried cookies
2 C wheat flour
2 TBS Berbere spice
1 TBS granulated sugar
1 tsp. salt
1/2 C water
4 TBS butter, softened
Preheat oven to 350-degrees F. In a bowl, combine flour, Berbere spice, sugar and salt. Mix in water gradually until the dough resembles a thick paste. Remove mixture from bowl; knead on a lightly-floured surface for a few minutes to form thick dough. Add softened butter; knead an additional five minutes. Allow the dough to rest in a cool place for about ten minutes. Divide the dough into handful-size portions; roll each piece into long pencil shapes. Cut rolls into pieces; cook each piece in an ungreased skillet over medium heat until lightly browned on all sides. Place pieces on a cookie sheet; bake for about twenty to thirty minutes. Remove from oven and allow to cool. Serve.
