Kitcha Fit-Fit
Eritrean spiced bread with yogurt
1 tsp. Berbere spice
Juice of 1 lemon
1/4 C olive oil
1 clove garlic, minced
1 Taita flatbread, ripped into pieces
1/2 C plain yogurt
In a bowl, mix together Berbere spice, lemon juice, olive oil and garlic. Mix well. Break flatbread into small pieces; add to spice mixture. Soak bread until liquid is absorbed, about one hour. Arrange bread on a platter; serve with a dollop of plain yogurt sprinkled with additional Berbere spice.
Variation: Soak flatbread in a mixture of one cup of melted butter and three teaspoons Berbere spice for five to ten minutes. Mix well with a fork until the mixture resembles buttery crumbs. Serve.
