Iraqi beef & potato casserole
1/2 LB ground beef or lamb
1 onion, chopped
1/4 C fresh parsley, chopped
2 cloves garlic, minced
Salt & black pepper to taste
1/2 C white rice
4 potatoes, peeled & quartered
Water
1/2 tsp. turmeric
Ground cinnamon
2 TBS butter
Combine meat and onion in a large skillet. Cook and stir until meat is browned. Add parsley and garlic; season with salt and black pepper to taste. Set aside. Add rice and potatoes to a cooking pot; cover with water and cook over medium-low heat for about twenty-five minutes. Drain mixture and return to cooking pot. Add turmeric; mash mixture until smooth. Preheat oven to 350-degrees F. Spread half of the potato mixture in a greased baking pan; spread the meat mixture over potato layer. Top with remaining potato mixture; sprinkle with cinnamon and dot with butter. Bake for thirty to forty minutes or until golden. Cut into squares and serve. Recipe makes about eight portions.
