Horseradish Sauce
4 tomatoes, cut in half
3/4 C freshly-grated horseradish
6 garlic cloves, peeled
2 tsp. salt
1 tsp. sugar
Wash tomatoes; remove stems and cut in half. Place tomatoes in a blender or food processor with grated horseradish, garlic cloves, salt and sugar. Blend until mixture becomes a smooth puree. Transfer mixture to sterilized jars with vinegar-proof covers. Refrigerate; allow to age for about two weeks before using. Khrenovina can be stored in the refrigerator for up to six months.
Note: Khrenovina is often served as a condiment with Pirozhki (Russian Pastry Pockets).
