Khao Soi Curry Paste
1 tsp. curry powder
1/2 tsp. salt
15 large dried chili peppers
2 TBS galangal (blue ginger), skin removed & chopped (sub with turmeric)
6 TBS lemongrass, sliced
5 TBS coriander root, chopped
6 TBS shallots, chopped
3 TBS minced garlic
3 TBS fresh ginger, chopped
1 TBS shrimp paste
1 C water
Remove seeds from chili peppers; soak chilies in water for about ten minutes and then chop fine. Place chopped chilies and remaining ingredients into a small blender or food processor; blend until smooth. If preferred, a mortar and pestle can be used to prepare paste.
Note: Used in Khao Soi (Chiang Mai Noodles with Chicken).
