Somali sweet biscuits or bread
1-1/4 C flour
1/2 C sugar
1/2 tsp. salt
1/4 tsp. baking powder
1 egg
2 TBS butter, melted & cooled
1-1/2 TBS warm milk
Vegetable oil (for frying)
In a bowl, combine flour, sugar, salt and baking powder. Add egg, butter and milk. Mix until a smooth dough forms. Wet hands and dampen surface of the dough to keep soft. Cover bowl with a damp towel; set aside in a warm place to rise for about thirty minutes. Flour a flat surface or large cutting board; turn out dough and roll to about 1/4-inch thick. Cut dough into shapes with a sharp knife. Heat vegetable oil in a large cooking pot or wok to a depth of about two inches. Add dough and fry until golden brown. Drain on paper paper towels and serve warm.
