2 C flour
1 tsp. baking powder
1 TBS sugar
Pinch of salt
2 eggs, beaten
2 C milk
1 TBS shortening, melted
Jam preserves
Whipped cream
Sift the dry ingredients into a bowl. Add the beaten eggs, milk and melted shortening. Stir just until flour has blended into the mixture. Drop the batter by tablespoonfuls onto a hot griddle or greased skillet. When bubbles begin to form on cakes, flip over and cook other side. Stack the cakes on a serving plate; spread an even layer of favorite jam preserves and whipped cream between cakes. Serve.
