Salted Herring

Soak the herring in cold water for ten to twelve hours, then drain. Mix the sugar, vinegar and water in a separate bowl. Add the allspice, bay leaf and onion. Pour dressing over the herring; cover and refrigerate for about two hours. Remove herring from dressing and cut into 1/2" slices. Cover again with dressing. Garnish with red onion rings and dill sprigs.

About Spirit Vinegar: Spirit vinegar is a biological product not to be confused with acetic acid, which is chemically produced. For the benefit of those with recipes referring to degrees, where quantities indicate degrees, this refers to the quantity of acetic acid the vinegar should contain. One deciliter of 12% spirit vinegar corresponds to one degree. "The term spirit vinegar is sometimes reserved for the stronger variety (5% to 20% acetic acid) made from sugar cane or from chemically produced acetic acid." [Data Source: Wikipedia].
