Hush Puppies
2 C white corn meal
1 TBS sugar
3/4 TBS baking soda
2 tsp. salt
1 TBS onion, minced
1 egg
1 C buttermilk
4 to 5 TBS cold water
In a medium-sized bowl, stir corn meal, sugar, soda and salt together. In another bowl, blend the minced onion, egg and buttermilk and beat until frothy. Pour all at once into the corn meal mixture and stir lightly to mix. Add just enough cold water to make a good dough; fry in a deep fat fryer for about two minutes or until evenly browned. Recipe yields about two dozen Hush Puppies.
