Beet & Horseradish Relish
1/2 C freshly-grated horseradish
3 C canned pickled beets, drained
3 TBS sugar
1/4 C vinegar
Place beets in a blender or food processor with the grated horseradish. Chop coarsely. Add sugar and vinegar; puree until smooth. Transfer the mixture to sterilized jars with vinegar-proof covers. Refrigerate; allow to age for about two weeks before using.
Note: Hrin is often served as a condiment with Pirozhki (Russian Pastry Pockets).
