Libyan butter cookies
1 C lukewarm vegetable oil or melted butter ("samn")
1/2 C powdered sugar
3 to 4 C of flour
Whole almonds for garnish
Preheat oven to 400-degrees F. In a bowl, mix "samn" and sugar well. Gradually add the flour; mix well. Shape dough into walnut-sized balls; place on a greased cookie sheet about one inch apart. Press dough balls to flatten into shape. Bake for ten to fifteen minutes. Remove from cookie sheet and cool on a rack before serving.
