Green Curry Pork
3 TBS green curry paste
2 TBS water
1 LB pork ribs or 3/4 LB pork roast, cut into bite-sized pieces
1 can (16 oz.) coconut milk
2 TBS fish sauce
1 jalapeno pepper, seeds removed & sliced
In a small bowl, mash together green curry paste and water using a spoon. Cut pork into bite-sized pieces; rinse under cold water. Place pork and diluted curry paste in a skillet. Add 3/4 can of coconut milk and fish sauce. Bring to a boil over high heat; cook for about five minutes, or until pork is cooked through. Add sliced jalapeno peppers. Serve.
