Gateau de Menage
Household Cake
Cake for Gateau de Menage:
2 TBS milk
2 TBS liquid cream or liquid Coffee Mate creamer
1 TBS caster sugar (substitute with powdered sugar)
1 C flour
1 TBS active dry yeast
1 tsp. salt
1 egg
1⁄3 C butter, cubed
Cream Filling for Gateau de Menage:
2 TBS caster sugar (substitute with powdered sugar)
1 tsp. vanilla sugar
2 egg yolks
1/2 C cream
Cake: Warm milk in a small saucepan; pour into a bowl with liquid cream and caster sugar. Add flour, yeast, salt and egg. Using an electric mixer, beat at low speed until mixture is well-blended. Increase mixer speed slightly and add butter a little at a time. Cover bowl with a damp cloth and place in a warm place for about two hours or until doubled in size. Place dough on a floured work surface; divide in half. Line two greased pie dishes or molds with dough. Cover with plastic wrap and allow to rise for about one hour. Preheat oven to 400-degrees F.
Cream Filling: In a bowl, mix together caster sugar, vanilla sugar, egg yolks and cream. Set aside.
Using a floured spoon, create a slight well in each dough bottom. Divide cream mixture and pour into the center of each cake; bake for about twenty-five minutes or until cakes are golden brown. Remove from oven and allow to cool slightly before serving.
