2 TBS minced garlic
3 TBS olive oil
1 large head cauliflower, separated into florets
1/3 C Parmesan cheese, grated
Salt & black pepper to taste
1 TBS fresh parsley, chopped
Preheat oven to 450-degrees F; grease a large casserole dish. Place garlic and olive oil in a large re-sealable plastic bag. Add cauliflower florets; seal bag and shake to mix. Pour mixture into prepared casserole dish; season with salt and black pepper to taste. Bake for about twenty-five minutes, stirring halfway through. Top with grated Parmesan cheese and chopped parsley; broil casserole for three to five minutes or until golden brown on top. Serve.
