Fette
Syrian cheese spread
1/2 LB feta cheese
1 garlic clove, minced
1 TBS fresh dill, chopped
2 TBS fresh parsley, chopped
1 TBS scallions, chopped
1 tsp. lemon juice
1/2 LB ricotta cheese
6 TBS butter, softened
Garnish (optional): Lemon slices, grated carrot, parsley & pine nuts
Place feta cheese in a blender or food processor; process until cheese is crumbly. Add garlic, dill, parsley, scallions and lemon juice; process until almost smooth. Blend in the ricotta cheese and butter by hand; mix well. Garnish with sliced lemon, grated carrot, parsley and pine nuts if desired. Serve chilled or at room temperature.
Suggestions: Serve with bread, crackers or melba toast; can also be used as a spread on sandwiches.
