Curry Mayonnaise (for artichokes)

• 1 C mayonnaise

• 2 tsp. curry powder

• 2 tsp. butter

In a small saucepan, melt the butter; stir in curry powder. Boil gently for one to two minutes over low heat to rid the curry powder of bitterness. Cool mixture and blend with mayonnaise. Serve.
