Sudanese caramel custard
8 eggs
4-1/4 C milk
2 TBS butter, melted
1 TBS vanilla extract
1/2 C granulated sugar
Aluminum foil
Water
Preheat oven to 350-degrees F. In a bowl, beat together eggs and milk until mixture is frothy. Add melted butter and vanilla extract. Add sugar to a non-stick baking dish and cook over medium heat; stir until sugar appears caramelized. Rotate baking dish to spread caramel to edges. Pour egg mixture into baking dish; cover with buttered aluminum foil and place in a larger baking dish half-filled with water. Bake for about thirty minutes. Remove aluminum foil cover; test custard with a knife. If knife comes out clean, the custard is cooked. Allow to cool and then refrigerate until chilled.
Suggestion: Serve custard with chopped fresh fruit.
