2 1/3 C all-purpose flour
2 C granulated sugar
1 tsp. baking soda
1 C Coca-Cola
2/3 C butter or margarine
2 TBS unsweetened cocoa powder
2 eggs
1/2 C buttermilk
2 tsp. vanilla
1-1/2 C tiny marshmallows (optional)
In a large mixing bowl, stir together flour, granulated sugar and baking soda; set aside. In a medium saucepan, bring Coca-Cola, butter or margarine and cocoa powder to boiling over medium heat. Add to the flour mixture, and stir until just combined. Add eggs, buttermilk and vanilla; stir until combined. Gently stir in the marshmallows (they will float to the top). Pour cake batter into a greased and floured 13X9X2-inch baking pan. Bake in a 350-degree F oven for about 30 minutes, or until a wooden toothpick inserted near the center of cake comes out clean. Transfer the cake to a wire rack. Immediately spread Cocoa Topping (see below) over the cake.
1/2 C butter or margarine
1/4 C unsweetened cocoa powder
1/4 C Coca-Cola
2 1/2 C powdered sugar, sifted
1 tsp. vanilla
1 C chopped nuts
In a medium saucepan, bring the butter (or margarine), the unsweetened cocoa powder and the Coca Cola to boiling. Add the sifted powdered sugar and the vanilla, and mix with a wire whisk until combined. Stir in the chopped nuts.
Cut cake into squares and serve. Recipe makes about sixteen servings.
