Coconut Rice
2 C Jasmine Rice
1 C coconut cream
2 TBS sugar
1 tsp. kosher salt
2 C water
Place rice in a large bowl; rinse under cold water until water runs clear and then drain. In a medium saucepan, combine rice, coconut cream, sugar, kosher salt and water. Bring to mixture to a boil, stirring to dissolve sugar. Cover and reduce heat to low. Cook until rice is tender and liquid is absorbed, about forty to forty-five minutes. Fluff rice with a fork; re-cover and allow to stand for about twenty minutes before serving.
