Chocolate Chip Cookies
1 C butter, softened
1 C granulated sugar
1 C brown sugar, packed
2 eggs
2 tsp. vanilla extract
3 C all-purpose flour
1 tsp. baking soda
2 tsp. hot water
1/2 tsp. salt
2 C semisweet chocolate chips
1 C walnuts or pecans, chopped (optional)
Non-stick cooking spray
Preheat oven to 350-degrees F. In a bowl, cream together butter, granulated sugar and brown sugar until smooth. Beat in eggs one at a time. Stir in vanilla. Dissolve baking soda in hot water. Add mixture to batter along with the salt. Stir in flour, chocolate chips and nuts (optional). Drop by large spoonfuls onto cookie sheets coated with non-stick cooking spray. Bake for about ten minutes, or until edges are browned.
