For Halloween Monster Sandwiches
1 C butter
1/2 C flour
3-1/2 C milk
1/2 LB processed American cheese
Melt butter in a saucepan over medium heat; do not allow butter to scorch. Add the flour in small increments, stirring constantly in order to avoid burning the roux. Add milk in half-cup increments, whisking constantly, until sauce thickens to a creamy consistency. Add the cheese in small portions, stirring constantly, until cheese melts and has a creamy smooth consistency.
Uses: For Halloween Monster Sandwiches. Can also be used in casseroles, or on pasta, potatoes or vegetables.
