3 C reduced-calorie all-purpose baking mix
1 C skim milk
1/4 C fresh orange juice
1 large egg
1 TBS grated orange peel
Granulated sugar substitute (to equal 1/2 C sugar)
1 tsp. vanilla extract
1/2 C mini semi-sweet chocolate chips
Preheat oven to 350-degrees F. Spray a loaf pan with vegetable cooking spray. Place baking mix in medium bowl. Combine milk, orange juice, egg, orange peel, sugar substitute and vanilla; add all at once to baking mix. Beat until well blended, about one minute. Stir in small chocolate chips; spoon batter into prepared pan. Bake forty to fifty minutes, or until toothpick inserted in the center comes out clean. Cool for ten minutes; remove from pan to a wire rack. Cool completely, then wrap in foil or plastic wrap. Store overnight before slicing.
