Vegetarian > Caribbean Black Beans >
1 1/2 C onions, chopped
3 cloves garlic, minced or pressed
2 TBS olive oil
1 TBS ginger root, grated
1/2 tsp. thyme
1/2 tsp Allspice
4 1/2 C cooked black beans, drained (three 16 oz. cans)
3/4 C orange juice
Salt & pepper to taste
In a large skillet, heat the oil and sauté the onions and garlic for about five minutes or until the onions begin to soften. Add the ginger, thyme, and allspice and cook, stirring often to prevent sticking, for about five additional minutes. Stir in the beans and orange juice and cook on low heat for about 15 minutes, stirring occasionally, until the mixture thickens slightly. Mash a few of the beans with back of a wooden spoon to get a thicker consistency if desired. Add salt and pepper to taste; serve.
