Shells: In a bowl combine flour, granulated sugar and salt. Add melted butter and Marsala wine. Turn dough out onto a lightly floured surface and knead until well mixed. Wrap dough in plastic wrap; refrigerate for two to three hours or until well-chilled. Roll out dough until thin. Using a cookie cutter or the rim of a glass, cut dough into 4-inch rounds; roll again until thin. Roll each dough piece tightly around a cannoli tube; seal with the beaten egg white. Heat vegetable oil to 350-degrees F in a deep pot. Place the dough forms in hot oil and fry until golden brown, about two to three minutes. Place on paper towels to drain. Allow to cool before gently twisting the tubes to remove shells. *Note: Cannoli tubes are available in most kitchenware stores or available online at such outlets as Amazon, Pastry Chef Central or Nextag among others.

 

Filling: In a large bowl, whip the granulated sugar, vanilla and ricotta together until smooth; stir in chocolate chips. Spoon the filling into a pastry bag; pipe ricotta mixture into pastry shells. Dust with powdered sugar and serve.
