1/2 medium head of cabbage, sliced
3 slices bacon, diced
1 onion, thinly sliced
1 C cooked ham, cubed
1 TBS butter
3 C leftover potatoes, cooked & thinly-sliced
1/2 tsp. paprika
Salt & black pepper to taste
In a large saucepan, cook the cabbage in a small amount of water until softened (about seven minutes). Drain; remove the cabbage leaves. Set aside. In the same pan, sauté the bacon and onion until soft, and then add the ham and cook until heated. Stir in the butter; add the cooked cabbage and potatoes. Mix well. Season with paprika, salt and black pepper. Allow mixture to cook until browned. Serve hot.
