Preheat oven to 375-degrees F. Grease muffin pan or use paper liners. In a bowl, mix together wheat bran cereal and buttermilk; let stand for ten minutes. In another bowl, beat together vegetable oil, egg, brown sugar and vanilla; add to bran/buttermilk mixture. In another bowl, sift together the flour, baking soda, baking powder, cinnamon and salt. Stir flour mixture into moist bran/buttermilk mixture until just blended. Fold in raisins (optional). Spoon batter into muffin pan. Bake for fifteen to twenty minutes, or until toothpick inserted into muffins comes out clean and dry. Recipe makes about one dozen (12) muffins.

 

Shenanchie's Note: I'm not overly fond of cooked raisins, so I omit them from my Bran Muffins.
