Blueberry Pudding
2 C fresh blueberries
4 TBS brown sugar
1 C granulated sugar
1-1/4 C flour
2 tsp. baking powder
Pinch of salt
1/3 C butter, melted
2 eggs
1 tsp. vanilla
Milk
Preheat oven to 350-degrees F. Arrange blueberries in the bottom of a 9-inch square baking dish; sprinkle with the brown sugar. In a bowl, combine the granulated sugar, flour, baking powder and salt. Combine melted butter, eggs and vanilla in a measuring cup to equal just over one cup. Beat lightly and then pour into dry ingredients. Stir to combine, and then pour batter over blueberries. Place baking dish in oven; bake for about forty minutes or until topping is cooked through and golden brown in color. Allow to cool slightly before serving.
