Moroccan orange & walnut salad
1 head romaine lettuce
3 oranges
2 TBS lemon juice
2 TBS sugar
Pinch of salt
1 TBS orange flower water
Salt & black pepper to taste
1/2 tsp. cinnamon
3/4 C shelled walnuts, chopped
Divide lettuce leaves and rinse under cold water; dry with paper towels and discard tough leaves. Peel oranges; remove skin and outer membranes of each segment. Place orange segments in a bowl; squeeze juice from remaining orange cores over the top. In another bowl, combine lemon juice, sugar, salt, cinnamon and orange flower water. Whisk to blend; season with salt and black pepper to taste. Shred lettuce leaves and place in a serving bowl. Add dressing and toss. Place orange segments around the edges of the bowl. Sprinkle with cinnamon and chopped walnuts. Serve.
