Banana Bread
1/2 C margarine
1/2 C milk
1 C sugar
4 overripe bananas, peeled & mashed
2 eggs
1 tsp. vanilla
1 tsp. baking soda
2 1/2 C flour
1 tsp. salt
Non-stick cooking spray
In a bowl, mix margarine and sugar until well-blended and creamy. Add milk, peeled and mashed bananas, eggs and vanilla. Mix until blended. In a separate bowl, stir together flour, salt and baking soda. Add to moist ingredients gradually, stirring until just blended.
Coat two loaf pans with non-stick cooking spray. Divide batter evenly between loaf pans. Bake at 350-degrees F for about one hour, or until a toothpick inserted comes out clean. Allow to cool before slicing. Serve.
