Algerian tomato & coriander salad
1/2 C fresh coriander leaves, chopped
1 hot chili pepper, seeded & finely chopped
5 ripe tomatoes, peeled
4 TBS lemon juice
1/4 C olive oil
1 tsp. salt
Slice peeled tomatoes; place in a large bowl. Sprinkle chopped coriander over tomatoes. In another bowl, mix together chopped chili pepper with lemon juice and salt. Beat olive oil into chili-lemon juice mixture. Pour over tomatoes and coriander; toss gently. Allow to rest for about fifteen minutes before serving.
