Uberbackener spinat Mit Kase
1 LB fresh spinach, rinsed clean
1/4 LB butter
1 onion, diced
2 garlic cloves, minced
1/2 tsp. salt
1/2 LB Emmenthaler Cheese, grated
1 tsp. paprika
1/8 tsp. nutmeg
1/4 tsp. pepper
Cut the spinach into strips. In a large Dutch oven, heat butter until bubbly. Add onion and garlic, sauté for two or three minutes. Add spinach; sprinkle with salt. Cover and steam for five minutes; remove from heat. Grease an ovenproof casserole dish, and sprinkle half of the cheese on the bottom. Add spinach; sprinkle with paprika, nutmeg and pepper. Top with remaining cheese. Bake at 350-degrees F for about twenty minutes, or until cheese bubbles. Serve.
Note: Emmentaler Cheese cheese comes in wheels or blocks with large holes that form during the maturing process (similar to Swiss cheese). Emmentaler has a nutty flavor with a yellow to dark brown rind; delicious on sandwiches and salads. It can also be used in sauces, hot dishes and cheese fondues.
