1 bag (6 oz.) baby spinach leaves
5 leftover small red potatoes, fully cooked & cooled
1 bunch radishes, trimmed & thinly sliced
2 TBS balsamic vinegar
6 TBS olive oil
1-1/2 tsp. sugar
1-1/2 tsp. orange zest
Salt & black pepper to taste
2 oranges, peeled & sliced
2 avocados, peeled & sliced
In a large bowl, combine spinach, potatoes and radishes. In a glass measuring cup, whisk together balsamic vinegar and olive oil; add sugar and orange zest. Season with salt and black pepper to taste. Pour mixture over salad; toss gently. Place salad on a large platter and top with orange and avocados slices. Serve.
