1 C flour
1/2 C cornmeal
1/3 C sugar
2 tsp. baking powder
1/2 tsp. salt
2 eggs, beaten
1/4 C milk
1 large ripe avocado, peeled, pitted & mashed
Preheat oven to 350-degrees F. Lightly grease a muffin baking tray. In a large bowl, sift together flour, cornmeal, sugar, baking powder and salt. Whisk in eggs and milk until mixture is smooth. Add mashed avocado; mix until just smooth. Pour mixture into prepared muffin tray. Bake until muffin tops turn golden, about twenty-five minutes. Allow to cool in muffin try for about ten minutes; remove to wire rack to cool completely. Serve.
