1/4 LB bacon slices, chopped
1 ripe avocado
1/2 tsp. lemon juice
Salt & black pepper to taste
3 TBS butter, softened
4 large slices whole wheat bread
Parsley sprigs for garnish
Fry bacon in a skillet until crisp; drain on paper towels. Peel the avocado but do not remove the bright green flesh just inside the skin. Cut avocado in half and remove the seed. In a bowl, mash avocado; stir in lemon juice, salt and black pepper. Butter two slices of bread; spread avocado mixture on buttered sides of two bread slices. Sprinkle bacon over avocado. Cover with remaining bread slices, buttered sides down; press together. Cut off the bread crusts. Cut each sandwich into four triangles. Arrange on a serving plate; garnish with parsley. Serve.
