Saudi Arabian homemade clotted cream
2 slices white bread
1 pint of half-and-half
2 heaping TBS cornstarch diluted in a bit of water
1 TBS sugar
Remove crusts from bread; discard. Dice bread. Pour half-and-half into a heavy saucepan; add diced bread and allow to soak for up to twenty-four hours, if possible. The next day, heat mixture over medium heat. Add sugar. Stir constantly until mixture begins to steam. Dilute cornstarch in a bit of water; add to mixture in saucepan. Stir until mixture thickens (be careful not to burn). Remove saucepan from heat. Pour mixture into a large bowl. Allow to cool; cover bowl with plastic wrap and store in refrigerator overnight before using.
Uses: Ashta is an ingredient in Aish As-Saraya (Saudi Arabian sweet bread) and Esh Asaraya (Qatari sweet bread with cream). Ashta can also be served with egg dishes or used as a pastry filling.
