1 can (14 oz.) water-packed artichoke hearts, drained & chopped
1-1/2 C cheddar cheese, shredded
3 TBS mayonnaise
1 TBS Dijon mustard
1/2 tsp. dried thyme
6 slices rye or pumpernickel bread
3 hard-cooked eggs, sliced
In a bowl, combine artichokes, cheese, mayonnaise, mustard and thyme; set aside. Place bread on a baking sheet; broil 4" from heat until toasted. Turn over. Place egg slices on un-toasted side of bread; spread with artichoke mixture. Broil for three to five minutes, or until cheese melts and top is golden brown. Serve.
